Duties & Supporting Responsibilities:

* Lead and provide essential vision to the stewarding operation
* Attend the BEO (Banquet Event Order) meeting
* Develop yearly budget (Labor, China, glassware, Silverware, Operating Supply, Kitchen Supply)
* Create monthly stewarding forecast to ensure proper inventory and staffing
* Monitor payroll and manage relationship with outsources staffing agency
* Manage Relationship with kitchen cleaning vendors in overnights (Excel)
* Develop weekly schedules
* Develop and facilitate cleaning schedules
* Develop and maintain sanitation and cleaning records pertaining to FLHSS&E program
* Attend to all employee comments and complaints thru Colleague Engagements Survey
* Track inventory for all glassware, silverware, and china
* Ordering of all operating and cleaning supply on a weekly basis
* Manage visit and follow up with Southern Nevada Health District and maintain Grades posting and permits
* Maintain and implement hotel pest control records including F&B binder
* Conduct weekly walk thru of all the F&B outlets
* Organize and track record of stewarding meeting with the F&B Director and Executive Chef
* Organize and supervise outside catering events

Requirements

Mandatory

* Minimum of 5 years experience managing a luxury hotel stewarding operation
* Bachelor's degree in hospitality management, culinary or other related area
* Strong verbal and written communication skills in the English language
* Working knowledge of stewarding and beverage operation
* Knowledge of kitchen equipment
* Ability to stand and/or walk for 12 hours a day
* Ability to lift or carry 20-100 lbs on a frequent basis
* Ability to perform all duties in extreme temperatures
* Have a strong sense of responsibility to maintain costs and FLHSS&E standards set forth by the company
* Be responsible for achieving and exceeding colleague satisfaction scores

Desirable

* Multi-lingual in English & Spanish
